Whole Wheat Banana Bread

Adam is a big fan of banana bread and I have a couple recipes that I like to make. Tonight I tried a new one and it turned out really good. So if you’re looking for a low-fat, healthy version, it’s definitely worth a try. The whole wheat flour makes it hearty. I substituted 1/3 cup of cinnamon applesauce for the oil and left out the nuts and it turned out great. Here’s the recipe:

Ingredients:

1/3 cup vegetable oil
1/2 cup honey
1 teaspoon vanilla extract
2 eggs
1 cup mashed bananas
1 3/4 cups whole wheat flour
1/2 teaspoon salt
1 teaspoon baking soda
1/4 cup hot water
1/2 cup chopped walnuts
Directions:
1. Preheat oven to 325 degrees F (165 degrees C).
2. In a large bowl, beat oil and honey together. Add eggs, and mix well. Stir in bananas and vanilla. Stir in flour and salt. Add baking soda to hot water, stir to mix, and then add to batter. Blend in chopped nuts. Spread batter into a greased 9×5 inch loaf pan.
3. Bake for 55 to 60 minutes. Cool on wire rack for 1/2 hour before slicing.

I also had to share this peony that I stole on our walk last night. Most of the bushes were beaten down from the rain, but this lovely lady was begging for me to bring her home. So Adam looked the other way and I snagged her (her name is Penny if you were wondering)! She’s already wilting, but I gave her a good home while she lasted.
